For the ribs
-2 racks baby back ribs
-1.5 l bottle Coca-Cola (regular)
-1 onion, large size
-6 garlic cloves, smashed
-1 tablespoon black peppercorns
-3 bay leaves
For the sauce
-1 cup ketchup
-1can Coca- Cola (regular)
-¼ cup brown sugar
-1 ½ tablespoon regular mustard
-1 teaspoon Worcestershire sauce
-2/3 stick butter, unsalted
-1 small onion, chopped
-2 garlic gloves, smashed
-salt and pepper to taste
The Coca-Cola is combined with the onion, the smashed garlic, the peppercorn and the bay leaves, into a large skillet. The ribs are dunked entirely in the sauce and boiled at a low temperature for 1 hour. They are checked from time to time, and when the meat can be easily removed from the bones, they are done.
For the sauce, the ketchup is mixed with the mustard, the butter, the Worcestershire sauce, the brown sugar, the garlic and the onion, in a large sauce pan. The Coca-Cola (1can) is added and seasoned with salt and pepper. The sauce is boiled at a low temperature for about 25 minutes, stirring continuously until it thickens.
The sauce can also be prepared with a few hours or 1, 2 days in advance.
The grill is preheated and the ribs prepared. They are removed from the skillet, dried, seasoned with salt and pepper and abundantly brushed with the sauce. The ribs are cooked for about 9 minutes and then set aside to rest. After a few minutes they are separated with a knife and served with the sauce. Enjoy!
